Some time ago I saw on the aisle at the grocery store a box of Smores cupcake mix kit type thing. I looked the box over. A light bulb went off. I could do that, I had all the ingredients I needed at home.

First I must confess, this was some time ago. Like beginning of summer. Yes I am a slacker to wait this long to share. But the worst is yet to come, I was so excited to try this I did not even think to take pictures until things were almost ready to go into oven. So pictures are scarce and we must rely on my memory from that day. In short we are doomed!

Here is how I recall that day.

My dad who at the time was on this kick of buying me cake mixes when he saw them on sale. There was this one mix that was, double chocolate or something like that. I just remember it was more chocolate then your average chocolate cake mix. So it was to be sacrificed in this experiment.

I mix the cake according to package directions. Now time for the graham cracker crust to be our foundation. I made a guess on how much I would need to line the bottom of the cupcake liner. So graham cracker crust is something I do make on a regular basis , I did not measure I eyeballed, cause you know my extensive experience would never lead me astray . I put some graham crackers in my little generic cheap version of the bullet thingy (technical term). Once I had crumbs I began adding melted butter till it was moistened. Well I made way too damn much. So I am going to make a guess and say you need 1 to 2 cups. Not a bowlful as I ended up with.

I pushed this mixture done firmly into the bottom of each cupcake liner. Now goes a thin layer of the cake mix. Here is the part that had me wishing I just bought the darn box kit to make this as I‘m sure the company has found the best way to handle this part. I needed to transfer my marshmallow cream into a baggie to squeeze the stuff into each cup. I first tried just using a spoon and putting a spoonful of cream into each cup but I was getting the stuff everywhere but the center, you know how sticky that stuff is. I went to the squeeze bag method.

Marshmallow cream is messy. Maybe it’s just me but that stuff fights me. So after fighting it into the baggie I snipped my corner and squeezed. Worked much better than the spoon. I then covered the cream with another layer of the cake mix. Into the oven to cook following the cake mix temp and time.

As I stood up from putting the pan in the oven I noticed the disaster of my kitchen and myself. My kitchen and my arms, hands, front of shirt and have mercy, even my hair had cake mix and marshmallow cream on them. Again I felt I would have been better off buying the box kit.

FYI: coconut oil will help get marshmallow cream out of hair.

As I finished cleaning up my timer let me know my cupcakes were done. I took them out of the oven. I wanted so badly to bite into one right then but I had this vision of me biting into one and marshmallow lava erupting all over me. I let them cool down while I took a few quick pictures. They were cooled down enough to taste test.
I finally took my first bite.

Holy Mother of Cupcakes. I don’t know how the box kit of this stuff taste but this, this was cupcake heaven. No icing was needed. At all. Now I had enough of everything to make a second pan but I was not fighting the marshmallow again. EVER.

SMORES CUPCAKES

Ingredients:
Chocolate cake mix from a box or your favorite recipe
Items needed to make the batter (eggs, oil, etc)
1 to 2 cups graham cracker crumbs
Enough melted butter to moisten the crumbs
1 jar of marshmallow cream or fluff as some people call it.
Strong baggie or icing bag to pipe out cream/fluff
Coconut oil to get that stuff cream/fluff out of your hair

Mix batter according to instructions on box or your recipe.
Moisten crumbs with butter, put a spoonful of crumb mixture into bottom of each cupcake liner. Press down until bottom is completely covered.
Next put down a thin layer of cake batter.
Pipe in a small amount of cream/fluff into center of the batter. Try to avoid it spreading to the edges.
Cover with another layer of batter.

Bake according to box/recipe instructions or until toothpick comes out clean. Avoid doing this to the center you will just hit the cream. Let cool, eat as is or cover with chocolate icing.

Now remember I made my own using ingredients I had at home. If you have to buy all the items it just might be cheaper to buy the box kit instead. It’s on the grocery store baking aisle with the cake mixes.

Super Bowl of Disaster

In baking sometimes things can go wrong, sometimes they go Titanic. The ship is sinking with no hope for rescue. That happened today. One baking pin went wrong and one went Titanic.

Pin 1:
Baking pancake mix in muffin tins to create a pancake bowl. I ended up with pancake muffins. So I didn’t get my pancake bowl, no problem. I just cooked up some sausage patties and made pancake/sausage breakfast sandwiches. Pretty tasty.

Pin 2:
Turning your muffin pan upside down to make cookie bowls. Yeah…that one was a disaster. No survivors. I have burnt cookie pieces in my hair, a pan that almost did not come clean and a husband who is still laughing at me. I will laugh about this one day also. Just not today.

The pancake bowl. I followed the instructions so I don’t know what went wrong. I will check out more pancake bowls pins and see if I can do something different next time. When I finally get it right I will share the experience with you.

The cookie bowl. It was a last minute thing, I was baking cookies for tomorrows family dinner. I was down to the last bit of dough when I spotted my muffin pan sitting innocently in the dish rack drying. I got an idea (obliviously this was my first mistake). I remembered a pin, if was just a photo with no instructions, but it looked easy enough.
So I flipped the pan over, gave it a nice coat of cooking spray, slapped on the cookie dough and popped it into the oven. The pin showed the cookie down covering each muffin tin completely. I worried I didn’t use enough cookie dough, I didn‘t have much dough left. Apparently it does not take much cookie dough to make a bowl. I used too much and ended up with a darn big mess.

Cookie was baked/burnt onto the pan. I had to get a butter knife to fight and scrape the cookie mess off the pan. Burnt cookie was going everywhere. EVERYWHERE. All over my nice clean counter, the floor, my hair, I even had some crumbs get into my eye. I did learn that saying curse words at burnt cookie stuck to a pan does not do a thing to help get it off the pan. I did go seek out other pins. Next time I will mold aluminum foil to the muffin tin. I will also use less cookie dough per bowl. Hopefully I will have success next time.

What the Peep? Cake

It is apparently cake baking week here at the crypt. I’ve been baking cupcakes or cakes everyday this week. Family gatherings, birthdays and tomorrow, Easter dinner.

A year ago I hosted a baby shower for my daughter who was expecting her first child. We had peep smores at the shower. So for Ms. Kaylei’s first birthday I suggested we peep out the cupcakes. My daughter agreed, which was a good thing since I had just bought a ton of peeps to try out the peep cake I saw on Pinterest. I had a lot of peeps. It was a peep invasion here at the crypt. So today I’m going to kill two peeps with one post.

The peep cake pin caught my attention for the simple fact. I LOVE PEEPS! I have never met a peep I didn’t love. This cake actually had peeps mixed in with the batter. Holy Peeps in a cake, Batman! I was excited to try to make this cake. I followed the pin to the website that had the full instructions.
The instructions used a spring form pan. I don’t have one so I used two round cake pans. FYI: if you have the spring form pan, use it. Before we go any further I must tell you. This cake was delicious. Mine did not turn out as pretty as the picture on the pin but I was able to live with that. I’m sure using the spring form pan would have changed the outcome of my cake. Guess maybe I need to invest in one.

Peeps Inside the Cake Instructions:
Ingredients
Your favorite white cake box mix or white cake recipe
About 2 dozen peeps. A variety of colors.

Heat oven to your cake recipe/box instructions. Prepare your pan.
Mix your batter. Again follow the recipe/box instructions.

Now get your peeps chop those little guys up, show no mercy. The original recipe has you chopping the peeps into tiny pieces. Mine were bigger, mainly because those things are sticky. The more you chop the more marshmallow insides are exposed and the more stickier things get. I was not a happy peep slayer when things got sticky.

If using a spring form pan: Once the peeps are chopped. Pour enough batter into your prepared pan to just cover bottom. Cover batter with your half your peep parts. Layer in more batter. Layer in rest of peeps, cover with rest of batter.

If using two round pans: Once peeps are butchered. Cover bottom of each prepared pan with a thin layer of batter. Split your peep parts into half. Layer one half in one pan the rest in the other. Cover each peep layer with rest of batter.

Bake according to recipe/box instructions or until an inserted a toothpick or fork comes out clean.

I cooled my two little cakes. Once cooled I turned them out. Before I could layer them atop one another the top layer fell apart. What the peep? The cake is just so fragile when you divide it in between two pans. I then understood why the spring form pan was used. So forgive my pictures of the little slices I was able to save.

So you see it wasn’t a pretty sight. Oh my, it tasted so good. So incredibly good. The cake did not even need frosting. I don’t think I will make this cake again. Mainly for the fact chopping those peeps up is pretty sticky business. I just can’t convey how sticky of a mess it was.

Peep Topped Cupcakes Instructions:

Bake your cupcakes. I made chocolate.
Frost the cupcakes.
Add your colored sugar or sprinkles. (optional)
Now pop a peep on top of each cupcake.
The chick peeps you just have to place on top of cupcake and push down slightly.
The bunny peeps, you need to make an indention in the icing in center of cupcake and hope the bunny stays upright when you place it on the cupcake.

Kaylei grabbed a cupcake with a bunny on top. Crammed the cupcake into her face. When she pulled the cupcake away there was the bunny peep sticking out of her mouth. She is such a cute peep slayer. The other kids loved the peep cupcakes also. What’s not to love? An awesome cupcake with a marshmallow peep on top. Life just doesn’t get any better.

Do You Know the Pumpkin Muffin Man?

I’ve been doing a lot of baking. A LOT. Last week I baked the star shape in a cake. Monday I baked Pumpkin muffins. The two posts to follow this one are going to be about baking also.

This past Monday I was looking for something simple and quick to bake that would satisfy my sweet tooth. I had pinned the pin for this the other week, I remembered it was simple. Two ingredients! Also there seem to be a few claims that each muffin is only 1 Weight Watchers point. Is it true? I have no clue, but it sounds good to me. Simple, quick and waist friendly. Sold!

The two ingredients are one box cake mix, any type and one 15 ounce can of Pumpkin puree. The pin used a yellow cake mix I used a white. I added a third ingredient. Just a tablespoon of pumpkin pie spice. That was a suggestion in the comments on the blog that the pin led to. Mix well. I used a hand mixer. Bake at 350 degrees 20 to 25 minutes.

Simple as that. How did it taste? Okay. I was not a fan, everyone else loved them. I might have liked them if I had some sort of frosting to put on them. I read where the chocolate cake mix with the pumpkin was better than the other cake flavors. I may try it one day. I also think it might be a decent breakfast muffin if you add some granola before making.

Last Christmas I did so much baking and candy making for family and friends. When all was said and done I had a few things left over I needed to use. One thing I had was little caramel candies. Honestly I don’t even remember what I used them for originally. They were still there taking up much needed cabinet space.
I remembered a pin where you put a ROLO candy in the middle of a cupcake or brownie before baking. I thought why not use the caramels in the same way? So the plan was simple, bake some chocolate cupcakes with caramels inside as a nice little surprise.
Yeah, pretty thought. Everything appeared to have worked out greatly. I opened one up while it was still warm, oh it looked so heavenly. The hubby and I ate one right away. The others I put some icing on after they cooled.
So after they cooled, icing applied and they sat on the counter for a little bit I decided I needed to eat another one. Did you know that once melted and cooled those damn little caramels get hard again? Hard as a damn rock. Why that did not dawn on me when I came up with the plan, I do not know.
Biting into that soft moist cupcake then hitting that hard sticky piece of caramel. Not a happy moment for me. I’m not going to lie one of my teeth got stuck in that chunk of caramel. I had to run to the nearest mirror and thus began the fight to get my tooth free from that evil caramel. I was in a panic I feared if I yanked that caramel to hard my tooth would come out with it. I envisioned an emergency trip to the dentist where once he asked to see the tooth I would shamefully pull from my pocket that piece of caramel with my tooth embedded in it. That was not going to happen!
I tugged, I twisted, I even tried to talk that caramel from my tooth. Wouldn’t budge. Finally I grabbed the caramel with both hands and yanked as hard as I possibly could. There was a “pop” then it was over. Thankfully it ended well for me. The tooth is still where it is suppose to be. No shameful emergency dentist visit. Whew!
I threw those cupcakes in the trash. I would say lesson learned but I know me I will see some pin, read the directions and decide to try it my way. Once again I will be off on another Pinteresting adventure.

Dark Days Ahead

With that being said let me share a little photo from my garden this past Fall. This is one of my all time favorite photos. When I see it pop up as my computer background my normally non-beating heart gives a little jump. I love Halloween, every aspect of it from the whimsical to the horrifying. The hubby and I are renters so I am unable to go all out on my gardening or my Halloween decorations. My landlords are very religious so I must respect their beliefs while celebrating my favorite holiday. In a neighborhood of thirty plus homes my house is the ONLY one decorated for Halloween. Which has all the neighborhood kids coming to look at the yard all October long. Most are young kids so between my landlords and little children I tone down my scary outside decorations. I’m okay with that, the scary is inside my house year round. Just ask my cable guy. He says when he sees my address pop up on the days rotation he is so excited he tells everyone he is going to the “Zombie House”.  Sad that I have so much trouble with my cable that he has to visit regularly. Okay now that I’m done rambling here is the photo.

Oh Halloween, how I miss you so.

Back to what today’s blog is about: Halloween prepping. Even though it is only March I use this time to stalk Pinterest for Halloween pins. Costumes, decorating ideas, projects, food, etc. Today I searched Halloween treats. Bite size candy apples caught my attention. There were several pins, I looked at them all. One common theme: everyone was having trouble with the candy coating not sticking to the bites. Seems it would just slip off the apple bites. If I would have had all the ingredients handy I would have tried it anyway. I think maybe caramel would stick better, sadly the only caramel I had was caramel sauce for ice cream. Yes I could have broomed it down to the store to buy what I needed but that would require me to change out of my spooky cupcake pajamas. Wasn’t going to happen.

Now I did have chocolate candy coating items on hand. Apples and chocolate? I have never tried it but I like apples and I adore chocolate. Why not?

What you need:

Apples (I used Granny Smith)

Lollipop sticks

Chocolate for melting (I used Wilton light cocoa candy coating)

Melon ball scoop

Tiny cupcake/candy liners (optional)

Sprinkles (optional)

Wax paper

Here we go:

Wash and dry your apples

Lay out your wax paper on counter.

Use what ever chocolate melting method you prefer. I used the double boiler method. Pot of simmering water with a glass bowl sitting on it.

As the water is heating go ahead and scoop you out some apple balls. Put peel side down, stick in lollipop sticks.

Once chocolate is melted, get to dipping.

After dipping I put some of the apple bites into the cupcake liners. A few I just sat out on the wax paper and tossed on some sprinkles before the chocolate set.

I was also working on another pin project that required the caramel sauce (holy giant pumpkin that pin turned out awesome).
For the photos I took one of the apple bites in a liner and covered it with caramel sauce. Looked nice for the photos, trying to eat that one caused a major caramel sauce incident. Which resulted in me having to change out of my spooky pajamas and into something not covered in caramel sauce.

I must say that now having tried apples and chocolate together, I am a fan. I will be adding this to my Halloween line up. I would tell you what the hubby thought of the apple bites but my dad came by and we ate them all before hubby came home from work.

Candy apple bites are not something you should make a day ahead. I would make them a couple hours before any haunted events.

I think I will make these for the family trip to the pumpkin patch this year. I’m sure my little devils would enjoy them as a snack.

So this Pinteresting project turned out very well, very well indeed. I do plan on trying the apple bites with candy apple coating and the caramel coating. I will share that Pinteresting adventure with you.

Dark Celebrations

Celebrations. We use them to mark major events in our lives, we use them as opportunities to see people we care about that we don’t see often enough, most of all we use them as an excuse to over eat. Amen on that last part!

To me celebrations also mean that I can spend hours on Pinterest ‘researching’ on what to cook, how to decorate, or find the perfect little DIY hostess/guest take home gift. I also like to show off the new additions to my little morbidly dark family. My two granddaughters (Little Miss K and her sister Miss S) and our most recent addition: Skelly.

Skelly was a homeless soul who spent his time hanging out on a shelf in a big store. I saw him on several visits I made in September, finally I had to step in and give this guy a home. Skelly came home and spent most of the next few weeks sitting outside in a lawn chair waving to the neighbors and yes most waved back.

I was finally able to coax him inside after Halloween. Now he sits at the kitchen table. So when I hosted Thanksgiving dinner this year I thought why not use this family function to welcome skelly? So yes Skelly sat between my mom and dad during the big Turkey Day meal. Afterwards during family picture time everyone wanted Skelly in their picture. A friend of the family posted the picture of them on FB stating he was her boyfriend.

Skelly just so happens to be sitting right beside me now watching me type this blog. So it was my year to host Turkey Day. I once cooked a whole turkey in the late 90s. A lot of work but it turned out good but I’m all about making things easy. So Pinteresting I went. Short time later….Crock Pot Turkey Breast pin was found. Oh happy day. This my fellow goth or goth loving friend turned out so good that this dish is a regular at the Gotha Stewart household.

The trick is to find the right size breast to fit in your crock pot. Mine was a tad to big and the lid wouldn’t close completely, I knew once it cooked down some everything would be okay. Till then I put the lid on and used a brick on top to hold down the lid. Speaking of crock pot cooking. This was the first time I tried liners in the crock pot. Oh my dear. Why had I never used these things before? Best. Invention. Ever.

I did not brown the top of the breast under a broiler. That’s more for looks anyway. The family was ready to eat so presentation was not a top priority. Rave reviews on this sacrificial bird! TRY THIS !

My daughter turned 20 this past August. I knew right away I was going to make her a multi colored cake. Purple/orange on inside with green icing. I used the batter coloring method from a past blog. People have asked what I use to color the batter. You can use the liquid food coloring or the thick gel stuff. I use the gel stuff. You can get a dark color without watering the batter down.

My sister has a birthday this week. Sorry I cannot reveal her age. She would kill me. For her I wanted to make her a Midori cake. Pinteresting I went. Every recipe I found called for only a few tablespoons of Midori. Really? Just a tad? If I’m putting it in a cake I want to be able to taste it. So here is what I did, and you can too. Whatever white cake mix or recipe you use, replace the liquid with Midori. If it calls for ¾ cup of water or milk. Use ¾ cup of Midori. The alcohol bakes out.
For Sister D I made Midori cupcakes. You can use a little Midori to flavor the icing. I chose not to since children would also be eating these. The icing was a canned buttercream frosting. I will be prowling Pinterest for some icing recipes soon.

The result: The Midori itself is green but the cake will barely have any green color. Next time I may add some green coloring to the batter.

Yes you can use a recipe from Pinterest if you prefer. There are many to choose from. There may have been some Midori consumption during the baking of these cupcakes. I blame Skelly.

You may have noticed that all my celebrations have a little spookiness to them. If you have a little darkness in your soul like me don’t be afraid to let it bleed out into your life year round. I hope all your celebrations are dark and spooky ones!
